Cheese Dip Recipe:

**1.5 cartons of Velveta (cut in to chunks)
**1 can of Evaporated milk
**2 cans of Rotel (undrained)
**2 cans of light red kidney beans (undrained)
**1 pound of ground beef (drain the grease) salted and sauted in onions (I use about 1/2 of a large onion)

Pour everything but the beef in to a crock pot and put on low. After the beef has been cooked in a seperate pan, salted and sauted in onions, add that to the crock pot mixture. Stir occasionally but for the most part, you can just let it sit for several hours till you're ready to eat it.
**For those of you wondering why the heck I'm putting a cheese dip recipe on the Siegel blog...several people requested it!**

It was great to visit with you all today!! Keith and Erin - hope you guys have a safe trip back to Birmingham tomorrow!! Thanks Missy and David for having us in to your home - your house is perfect for entertaining and the kids had such a good time playing in ya'lls pool!! :)

It was great getting to see everyone on Sunday! We did make it back safe to Birmingham (and might I add, it was a quiet trip - hmmmm? - oh yeah, NO KIDS!). Anyway, we had a great time hanging out with everyone (thanks Earl for providing the pool side entertainment - at Melissa's expense!).

We are all blessed to be a part of such a wonderful family. I am thankful for each one of you! We hope to see everyone later this summer - Ichetucknee Springs sounds great, Lindsey!
